Frozen
storage:Freezing minimizes changes in
the juice flavour during the storage
period. In order for the juice to be
stored frozen, it is filled into large
containers. The frozen product is usually
kept at -18 c or lower.
Aseptic
storage in tanks: If the concentrated
juice is not going directly to the filling
machine the juice has to be stored chilled
in aseptic tanks. Unique fabrication
techniques are used to coat the internal
surfaces of the tanks. The preferred
storage temperature is about -1 c, just
above the freezing temperature of the
juice.
